Cut zucchini into 1/4" slices. Sprinkle with salt and mix about a tsp. for 4 cups and let sit an hour. Rinse salt off zucchini and ring dry in a clean dish towel. Mix together 2 cups breadcrumbs and any spices you like. I use black pepper and garlic powder, sometimes oregano or basil. You don't have to add salt because it was sprinkled with salt earlier. Dip zucchini into breadcrumbs. Using a spray bottle, lightly spritz zucchini with water. Then dip into crumbs again. Place on paper towels or wax paper. Heat oven to 400 degrees. Pour olive oil onto baking sheet. I am very generous with the oil. If you're concerned about calories go lighter on the oil. Put the baking sheets in the oven to heat oil. Take heated pans out and place zucchini on sheets. Put back in the oven. After about 7 minutes check to see if zucchini is browned on bottom. When browned turn zucchini to bake about 5 more minutes until golden brown on the bottom. I add more oil when I turn the zucchini so it's really crispy and delicious. We like it plain best but it would also go well with your favorited dip.
