Rhubarb Cobbler


Rhubarb Cobbler

Spread 3 cups chopped rhubarb in a 9" x 9" buttered baking pan 
Sprinkle 1 cup of sugar over the rhubarb

Cut 1/2 cup of butter into 1 cup sugar. To that mix in 1 cup flour and 1 tbsp baking powder. Then add 1 beaten egg mixed with 1/2 cup milk. Mix together and spoon over top of rhubarb.

Bake at 350 degrees for 40 - 45 minutes. Serve plain or with ice cream or whip cream. Very good! The crust would be good for lots of different cobbler flavors.
